I assume you need 5 crates and 5 fully assembled "mechs" to get one coupon for a vehicle? Meaning you need all that x3 to get the nicer vehicles? Is this correct?

no, you need a single crate for every 5 fully assembled mechs. Once you load the 5 mechs into your crate you get 1 certificate you can redeem on vehicles.
